I am thinking about covering my niece's wedding cake with fondant. I have used fondant for other projects but have never actually covered a cake with it. My question...part of the cake will be fake and I would like to finish it earlier. How long can the "cakes" be kept without cracking or looking dry? Also, I want to know the purpose of steaming fondant once applied. Of course, I will experiment way before the actual cake!
You can cover the dummy cake well in advance with no problem at all. Steaming is done to make fondant shiny. I probably wouldn't steam the entire cake but maybe the decorations. HTH
