How Many Layers?

I've been decorating for years under the impression it is not safe to stack more than two layers of cake at a time without doweling them. Recently I have seen where bakers are stacking 3-4 layers at a time, how safe is this?
Can the layers hold their own weight. Or are the layers being doweled and I am just missing it. icon_confused.gif

Depends on what you mean by layers. You do need support every 4 vertical inches. i stack four layers of cake, but my tier is still only 4" tall.

And yes, when you start doing 6"-8" tall tiers, there is internal support.

Thanks so much! I was counting a layer as a 2" cake, just wasn't counting the filling. icon_lol.gif
