everyone makes bunny or rabbit cakes for Easter. My niece is wondering if she can make the cakes (unfrosted) and wrap securely and freeze without having cake dry out. She makes several for friends and neighbors and is a teacher and new mom but wants to continue with her gifts. This year she has time constraints due to new baby...thanks all and Happy Easter.
OF COURSE she can freeze her unfrosted cakes! Just wrap them in a couple of layers of plastic wrap. The only trick is to wrap them in such a way that they're airtight but not so tightly that the plastic wrap deforms the cake. There are lots of decorators who, like me, always freeze cakes before decorating them. It seems to help them retain their moisture longer and it also helps them settle, so that they stand up to heavy decorations like fondant better.
