So I have never done an outdoor cake event so with summer coming up I was wondering how do you guys handle outdoor weddings and other events? What kind of cakes hold up outdoors with the hot weather?

Use a good crusting BC or fondant. Avoid perishable icings/fillings. I always required the cake be under a canopy of some kind ..... deck, porch, tent. (Actually food being under a covering is a HD requirement around here, so it was easy to "demand" that.)

My icing holds up well in extreme outdoor heat. 90+ degrees, SUPER high humidity, never had a melting problem.

I had one bride who asked "Can I have the whole cake iced in cream cheese icing?" to which I told her, "Not for an August outdoor wedding you can't." icon_biggrin.gif
