Im doing a hexagon shaped cake and wanted to do each of the side in a different color. What is the best way to go about this? Covering the whole cake 1st and then putting the fondant color of choice over that? Just seems like it will be to thick. Or should I do each panel individually?
Thanks in advance...

Depends on your experience level. One base coat then colored panels is the more surefire way to go.
