Box Mix Or Scratch??

Im planning on opening my own cupcake shop soon and im debating on weather to use box mix or out of scratch??? what do other bakers out there use??? i need some suggestions please??? icon_biggrin.gif

As of now I only use ONE box mix for ONE kind of cupcake. I use a spice cake mix because it's the BEST spice cake I've ever had. I've tried 40 or 50 scratch recipes and none of them are as good as the box mix ( I do doctor the cake mix a bit, I use buttermilk instead of water). Spice cupcakes from scratch are pretty costly to make, with prices of cardamon and all of that going up...so the mix helps me keep my cost down and it's actually one of my most popular cupcakes, lol.

Everything else is made from scratch and I only use cake flour, not all purpose flour.

I think im going to try the cake flour. i only use all purpose flour.
