Last night, at 2AM, I finally made IMBC that turned out perfectly. Usually, it comes out a soupy and I have to refrigerate it a little bit.
Why, you might wonder, after 2 years, have I finally mastered a batch of IMBC? Well, I finally read the directions correctly!!! All this time, I've been inverting 2 steps. Usually, I boil the simple syrup, beat the egg whites, add them together, put in the butter, then mix it FOREVER to try to cool it down. It's always a soupy mess that I have to refrigerate to cool down anyway.
Well last night, I finally read it right! Boil the simple syrup, beat the egg whites, add them, NOW BEAT TILL COOL, and then add butter once it's cool!!!!!!
Whatdya know! PERFECT IMBC!!!!! Reading directions has always been my downfall.

You mean you added the whites to your syrup? Hmmm...never heard of that before. I personally cannot figure it out either. Mine turns into a soupy mess every time and there is no saving it. I've tried just about everything.
