I'm making a cake that needs refrigeration (cream cheese frosting). The cake is covered in fondant. Should I decorate the day of th event and allow it to be refrigerated briefly, or will it be okay if I decorate it the day before and store in the refrigerator. I'm nervous about sweating...Also, how long before the event can it be left at room temperature? And how long from the time I put it at room temp until it stops sweating? Sorry, lots of questionsicon_smile.gif

More critical is the 4 hour window for food safety. If you've used a cream cheese icing that's not food safe at room temp, then the total time it can be out of refrigeration is 4 hours. That includes, mixing, decorating and display time. Then it has to be throw out.

And that's why I never use a cream cheese frosting that has to be refrigerated.
