Hi all, I have a friend wanting a Boston Cream pie, decorated, and I'm a fondant decorator. I've never made one before so I'm assuming that I need to cover it with ganache. Does ganache work well under fondant? Anyone have any tips?
Ganache is great under fondant. Just make sure the ganache you use is not a very runny recipe. About 600ml cream : 1.2kg dark chocolate is good.
