I have been asked to make cupcakes for a Passover birthday. Unfortunately, the birthday boy is allergic to nuts and doesn't like chocolate so the only recipes I can think of are sponge cake.... i.e. no flour, no nuts, no chocolate. Does anyone have a suggestion? Would appreciate your input! Thank you. Caryn
Hi, I found this recipe, Just use and bake as you would normal cupcakes.

1 cup vanilla sugar or 1 cup sugar plus 2 teaspoons vanilla extract
3/4 cup matzo cake meal
1 tablespoon freshly grated lemon zest
12 large egg whites, at room temperature (see Tips)
1/2 teaspoon salt
1 teaspoon lemon juice
