Recipes From Scratch Vs. Doctored/boxed

I am starting a cake business and I am in the process of figuring out the menu and recipes to use. I have mostly scratch recipes but use the WASC cake recipe, because I can't find a white cake recipe I like. My question is...is it ok to use this or should it be from scratch? I feel kind "funny" using a boxed cake. How about icing? Do a lot of businesses buy icing in bulk? Or make it all yourself? Thanks for any info.

I personally only make cake from scratch but I know A LOT of bakeries use doctored box mixes. This is likely to elicit a lot of heated debate as to which is better but the bottom line is to use whichever works for you and your customers. I think the only thing about box mixes is to make sure that you let your customers know you're using a mix if they ask. icon_smile.gif
