what would be the best white icing (does not have to be bright white) to use for an outdoor wedding on WASC?
How long is cream cheese icing ok out of the fridge? (for the carrot cake)

I don't know about the cream cheese icing, but the best icing for outside wedding, especially in heat and humidity, would be with hi-ratio shortening. No butter.

Last year I made a cake for a class and used butter in my icing and it melted so bad I couldn't decorate my cake and that was inside, but the room was a little warm. Not uncomfortably so, but just a little on the warm side.
