I have a three tiered sweet 16 cake I need to make. The client requested red velvet cake. I have made smaller cakes with boxed red velvet mix and the were very soft. I'm afraid a boxed mix isn't strong enough to support a three tiertier cake covered in fondant. So if anybody has any recipes or suggestions they would like to share I would be very grateful.
