Baking Temps & Times For Odd Shaped Pans (Topsy Turvey)?

We decided to purchase a set of the Whimsical ( Topsy Turvey ) pan sets of 5 and have been having nothing but bad luck when baking the cakes. We feel that we have mastered the art of baking cakes of all the standard cake pan sizes even up to the larger ones that are 3 to 4 deep. But for some reason these pans that are 4 or more inches deep on one side and taper to 2 or more inches deep on the other side are giving me and my husband a fit. For an example we baked the 10 Round that is 5 deep on one side and 2 ¾ on the other. The first try with the pan 2/3 full at 350° for 1 hr 45 min and it fell and burnt on top plus it ran over the sides. The second try was again at 2/3 full at 325° and checked it after 75 mins and it was still wet inside so we baked it for an additional 30 min and it too fell. I know this should be simple but if you have any tips or advice please HELP.
