I just finished baking Chocolate Cupcakes they are perfect dome shape, but the top is slightly hard and the cupcakes are moist and delicious. Why does this happen? I started the oven at 400 and once I placed the cupcakes inside, I out the oven heat to 325. What is cause my cupcakes top to be hard??? Also my Vanilla cupcakes has a weird egg smell to them help!
i would reduce the heat in the oven, and take them out a little bit earlier.
Sometimes it depends on the recipe. A higher sugar will cause the top of the cupcake to be hard. But I have found that once I put on the buttercream it softens the tops. Have you put frosting on them yet?
