OK...so three batches later and my BC is still giving me that awful airy texture. I'm using Sharon Z's recipe and following her instuctions but for some reason it has a "gritty" look. The taste and texture feel ok, but it looks airy/gritty. What am I doing wrong....SO FRUSTRATED!

Are you using the mixer's whip or the paddle? Is the amount of icing enough to come up to the "shoulders" of the paddle? How fast are you mixing ?

Leah I am using my KA mixer the icing comes way up, covering my paddle attachment. I think that my mixer may mix too fast on it's lowest speed. I'm not sure if there is something wrong with it, but it seems faster than it should? Thanks for you help
