Wet/gooey Cake

Ok the past 2 times I have baked a cake when I cut into them the cake is really wet and mushy. Ive never had this happen before so im not sure what is diffrent the past couple of times. Does anyone know what could be causing this? I bake them and let them cool and the level, do a crumb coat and sometimes i still in fridge for 20 minutes or so and sometimes I dont, them I ice, but as I said the last couple of cakes have been wet and mushy or gooey when I have cut into them!? Any suggetions as to what I may have done?

Sounds like it wasn't baked long enough. Do you have an oven thermometer?
