I made a large batch of red velvet batter which I used for cupcakes. Not all of the batter was used right away (45 minutes). Seemed like my last cupcakes deflated a bit. Is there a problem if I don't use the batter immediately? I wondered if the vinegar/soda mixture became less potent.

Yes with all batters, for best results, it needs to be used immediatly, especially red velvet...I forget the exact explanation (I just recently made some cupcakes) but it was stressed that it does need to be used right away.
