Im finishing up a cake this morning and they are requesting a giant letter on top of the cake.. my experience with this is.. bad. I can never get the letter to stand on the top of the cake... do you back it with some kind of candy stick.. push it into the cake?

Make it out of chocolate (candy melts) and build a toothpick-skewer into to to jam into the cake

I have used the candy stick and stuck it onto the back of the letter with candy melts, or if the letter is really thick , I have put the stick right in the center of the letter. I have also used wire whem I am doing a thin gumpaste letter. Be sure to let it dry completely or it will droop.

I make my numbers and letters several days before I need them to give them time to dry out. I use just plain fondant sometimes and others fondant and gum tex or tylose. I also usually put a skewer through them before they dry so I can place them on the cake.
