Cream Cheese Frosting

I will be baking a 12 x 18 sheet cake this Friday for delivery Saturday. Since I will be using cream cheese icing does the cake have to be refrigerated? That size cake will not fit in my fridge.

It should be fine for that length of time. But I would let the recipients know that any leftovers should be refrigerated.

Nah, you are fine overnight. Hopefully there wont be any leftovers!!

Do I crumb coat with creamcheese or butter cream, which do I use for the border?

I use buttercream for the crumb coat and trim because my buttercream has fewer behavior problems. icon_rolleyes.gif
