I use Frosting Pride or Bettercreme. It is uaually available at Smart n Final in my area.
There are several options for stabilizing whipping cream. Wilton recommend piping gel

You can also mix instant pudding with whipping cream and make a mouse but this fundamentally changes the texture.
There is a another option but right now it's escaping me. In all cases these require refrigeration. The Frosting Pride and Bettercream are shelf stable and do not require refrigeration for several days.

ive never heard of bettercreme or frosting pride..would you just whip it until it becomes thick?
Yes, it comes frozen. You just thaw and whip til desired consistency. It can be flavored with just about anything. Here is a thread about it. It really is a fun product. Enjoy!!!!!

I have used the piping gel one and it works very well, but sillywabbitz' sour cream recipe sounds great. That's going to the top of the "try" list.
I use Frosting Pride all of the time, it stays nice and fluffy inside the cake and is perfectly stable. I get mine at a little cake supply store here but I know it is online all over. Bettercreme is found at Sams Club, it works just the same.
