Help..i Have Got To Do My First Ever Caramel Cake.

Please help. I have to do my first ever Caramel cake..
The customer would like an 8", 10" and a 12" round 3 tier cake. I can do all of it, but I have never made a caramel cake before.
Has anyone got a nice recipe for this caramel cake and can you tell me wether I would have to bake it single or put it in a sandwich tin and pile them up? If so would you put a filling in it or not? It is to be decorated in fondant.

Hi AnnaReed, I haven't made a caramel cake yet, mainly because I don't like them.

But, here's a recipe from a chef who used to make it for a restaurant, and the Daring Bakers (hundreds of bloggers who are in this group) picked it up one year, tried it, and they all blogged about it. He even started teaching a class about it.
