I have tried several recipes I've found on here including strawberry buttercream and several strawberry mousse recipes, and they have either been too sweet or not stable enough.
I am looking for a great strawberry filling recipe that will be stable enough to withstand stacking (not just whipping cream), can stay out for a bit and not have to be refrigerated right away, but not too icky sweet (and I like sweet) with jam and buttercream (was too sweet even for me). I don't have time this week to experiment on my own and am hoping someone can point out a recipe they use or like. Right now I have several batches of strawberry fillings in my freezer that just didn't work for me and my friend is quite particular. Thanks!
The Wilton site has a delish FRESH strawberry filling that does NOT taste like jam from a jar. The sweetness can be controlled by adjusting the amount of sugar.
