Coconut Cream Cheese Frosting Under Fondant??

Hi Everyone,

I am making a birthday cake and the birthday girl loves coconut! I found an amazing coconut cake recipe, but the frosting contains cream cheese. Could I use the frosting contained in this recipe in place of buttercream under the fondant? If so, would I need to refrigerate the cake? I have heard a lot of mixed reviews about putting fondant in the fridge. Any help would be greatly appreciated icon_biggrin.gif

With the amount of sugar that it calls for it will actually act as a preservative, and I have put my fondant covered cakes in the fridge with no problems. Alot of people here will tell you not to if you're going to pipe with colors that, red... I just use fondant decor so It worked out fine for me.
