I am making a birthday cake and the birthday girl loves coconut! I found an amazing coconut cake recipe, but the frosting contains cream cheese. Could I use the frosting contained in this recipe http://dining.discoversouthcarolina.com/giftforyou/recipe.aspx in place of buttercream under the fondant? If so, would I need to refrigerate the cake? I have heard a lot of mixed reviews about putting fondant in the fridge. Any help would be greatly appreciated
With the amount of sugar that it calls for it will actually act as a preservative, and I have put my fondant covered cakes in the fridge with no problems. Alot of people here will tell you not to if you're going to pipe with colors that bleed...black, red... I just use fondant decor so It worked out fine for me.
