This is my first year doing a Bridal show and I'm not sure how far in advance I should do my cake dummies. I know that when fondant sits the color tends to fade. The show is the first week in March and I have about 3-4 that I want to do.

I use the same dummy cakes from year to year, so it doesn't matter how far in advance you make them. Keep the fondant ones out of the sun and you shouldn't have a problem with fading.

Make them asap so that the fondant has a chance to harden before handling them. You will have less finger dents this way. The fondant looks better once it dries as well. Just cover lightly with a plastic bag to keep the dust off once the fondant has dried.

you can make them years ahead if you want too. Some colors are prone to fading (purple, pink and blue are big ones) but if you keep them out of sunlight and flourecent lights you should be fine.
