Does anyone know of a low fat or low cal buttercream frosting? Need one for a diabetic customer.

There's a difference between fat content and sugar content. Butter has no carbs in it, tons of fat, but no carbs. Just don't use a receipe where you're dumping in tons of powdered sugar, maybe a meringue buttercream instead.

And maybe figure out the carbs per serving for them. My good friends daughter has type 1 diabetes, she still eats my cakes, cookies or whatever, I just tell her how many carbs it has so she can make sure to use the proper amount of insulin. Mabye it's different with type 2 though.

My mom is type 2 and she eats cake and icing and most sweets with no problems, she has learned how to take care of herself and her illness. I'd talk to the person about it first and see what they think. My mom would say "don't you DARE skimp for me.. I want the real stuff" icon_smile.gif
