Colouring Fondant

I just made rolled fondant (NOT MM) for the first time. I used a vanilla extract, so the fondant looks dark, as opposed to white. I am going to colour it, but am wondering, how long after making it can I colour it? Also, how long should i refridgerate the fondant before I can use it on my cake?
