is there any recipes out there for buttercream and royal icing that doesnt use shortening?

You can always substitute butter for shortening, in whatever buttercream recipe you're using.
Royal icing breaks down in the resence of fat, so shortening isn't used at all. It's just a combination of powdered sugar, water, egg whites (or meringue powder) and whatever flavors / colors you'd like to add.
