Help With Dairy Free, Wheat Free, Sugar Free Wedding Cake!!

My brother is getting married and I have been asked to do the wedding cake. The problem is that his fiance can't eat wheat, dairy, and sugar. They want a cutter cake that she can eat. I think I have found a cake that I can use, but I am being stumped by the frosting. She suggested a coconut milk ganache. Will that whip up, or pipe? Does anyone have any other suggestions. I am feeling pretty stumped by this one!

Thanks in advance for any help. I need as much as I can get with this problem!

This past year I had such an order. I used spelt flour which does have a slightly different flavor and xylitol as the sweetner which I was told can be used in equal amounts to sugar.
I found it needed slightly more xylitol.
I got these two items at Whole Foods.
The xylitol is very expensive so know that you will spend $20 on that alone for an 8" two layer and 6" two layer.
The cake was pretty tasty though. It was covered in ganache using unsweeted belgian chocolate sweetened with the xylitol.
