in the WASC recipe. Cake flour or all purpose flour. If using cake flour, does the recipe have to be altered in any way?

I use self rising flour for the extra bounce so it's not too dense. Cake flour will give a finer crumb.

Perhaps experiment--split a mix in half and try it & let us know how you like it.

I use regular and it's fine.

i would suggest...regular if you are stacking and cake if you are not...regular will give you a denser cake and hold better in the stack...cake flour will make it more airy and light and it will be more soft in the stack...hth
