I'm looking for a good peachy filling for a french vanilla cake. I wasn't able to find one doing a recipe search. Thanks for your help.

I've not tried this one yet but want to, it comes from Southern Living.
2 - 16 oz. pkgs. frozen sliced peaches, thawed
2 c. sugar
1/4 c. butter
1/4 c. lemon juice
2 envelopes unflavored gelatin
1 Tbsp. peach liqueur

i use this "raspberry filling" recipe for all of my fruit fillings. Just substitute the fruit that you want in place of the strawberries. And start with the lower amount of sugar to begin with (as some fruits have more natural sugar than others) so it's not too sweet.
