I have been asked to make a walnut and coffee cake for my Auntie who is diabetic.

I've searched high and low and can't seem to find one. Any ideas?

This one doesn't use any refined sugar. (the worst for diabetics) Replace pecans with walnuts.

Uk medical advice Is now to have regular cake, just a smaller slice.
Or I would assume that like regular cake, if you have a vanilla recipe you can just add the coffee and walnuts to it.
