I have 3" clear pillars and the square plates but I'm not sure how to insert the flowers so they stay put> should I use foam or an oasis?

Something you can do is use a little plastic container. Cut the wet floral foam to the size of the container. Make sure that you tape the foam to the container. Tape the container to the plates. Place the flowers into the foam before you place the plates on top of the cake just in case that the water spills. I hope this helps. If you have more questions let me know.
