I want to make a red velvet cake for someone but I don't want to use cream cheese because the cake will be out for a couple of days. I was thinking of using a white chocolate ganche to ice it. Has anyone ever tried this?

i know other people have and liked it! lets face it, chocolate works with everything!

I did this for RV Cupcakes....worked fine thumbs_up.gif

Just one tip tho - as the RV isn't a real dense cake - i filled and covered my cupcakes whilst the white ganache was still soft - i didn't let it *set* up overnight.
Otherwise it would have had too many cake crumbs everywhere... and i didn't want it to tear the cakes.
