I've use RKT to make a piano for the grooms cake, wasn't a problem. I made it about a week in advance because I had the brides cake and all the small cakes for the grooms table to do. Hope it works good for you.

I would have thought purely that amount of sugar in the RKT and lack of "risky" ingredients (fresh cream, eggs etc) it should be ok. After all - how long are RK Squares found in shops on the shelves for? They have a shelf life of a year or something like that

I think it depends if you are making them yourself or using pre-made treats. When I make them fresh, they get stale in a day or two, even when I keep them in a plastic container.
