Question About Piping Gel

I have previously used the recipe for homemade piping gel (recipe name: Piping Gel that Works) that has lemon juice in it ....but, I thought the lemon taste was too strong. Is there any reason I can't use the same recipe but leave out the lemon juice? What purpose does the lemon juice serve?

you should just buy it from your local cake decoration shop.

I can only get Wilton brand piping gel. I don't like the taste and it is expensive. I would rather make it if I am going to use it for a large part of decorating a cake.

I use the Wilton piping gel, and I agree it does not taste good. I did find that when I add in a little tonic water, the taste is pretty good. Just a thought in case you want to try it.
