Does Cream Cheese Have To Be Refridgerated.

help... I have several xmas cakes to do that I would love to ice with cream cheese icing. However I will be covering all these cakes with fondant. I usually cover on thursday, decorate on friday for a saturday delivery.i do not have good luck with refridgerating my cakes after decorating.... I know some on here say that there is enough PS in the icing ,that refridgeration is not nesessary. The cakes I am making are all cranberry/orange I tried orange buttercream icing tonight, its good but not as good as the cream cheese..Thanks in advanve for any help.

Unless your house is at 38F, I would refrigerate.

If you have your heart set on cream cheese, then yes, you need to refrigerate. However, a white chocolate BC would pair wonderfully with those flavors if you wanted to venture out. Just a thought. Good luck and have fun!
