What can I use to spread over the cake before covering it with marzipan, aside from apricot marmalade? I've been looking all over the internet and everyone seems to only use marzipan to cover fruit cake. I've made a coconut cake with strawberry filling, and marmalade seems out of place. Any tips?

I always use a sugar syrup under marzipan, equal parts sugar to water, bring to boil then simmer for 5 mins. Let cool then brush over cake.

U honestly don't take the apricot jam - people use it as it is the blandest jam.
If u want, u could use strawberry jam as that would go with ur filling.

yes, the apricot jam is very light in flavor, and you only really need a very small amount (when used on fruit cakes at least) to help the marzipan to stick . . . Plus with fruitcake, youve got very strong flavours in there so it over powers the apricot really . . Im not sure how it would go with your cake however . . But i dont think it would be too noticable.
