I just bought some blue agave and am anxious to give it a try. I've read that you can substitute it for honey when baking. Has anyone tried this? Any recipes you'd recommend? Any tips?
I read that agave is not exactly recommended for baking.
We used it in a candy class, to make fillings, with great success.
Thanks for your input. I did find some recipes, but I'll keep looking. Yes, I heard that it is not good for certain desserts like cookies, but ok for things like muffins or cake. I read somewhere that it is not good for "hard" desserts (like cookies). Good to know that you can use it for fillings.
