Cooking 1 Inch Layers?

I have noticed on some of the cake shows that some of the bakers seem to bake a thin (I am thinking 1 inch) sheet cake and cut it into the size they want with like a big cookie cutter. Does anyone do that? If you do are you using a 1 inch jelly roll pan to do this in? Do you need to use flower nails or something in the middle so it cooks properly? I have a project that I want to do and I think these 1 inch layers would work best for me. If anyone has any suggestions or input I would really appreciate it.

The pros are using standard sheet pans, either a half or full sheet. And they're using cake rings to cut with. I did it in school for something or the other, but not since then.
