How far in advance do you want to make the oreos?

I wouldn't freeze them, but I once had an order for 72 dozen (yes, thats a LOT of oreos!). I started making them about 10 days in advance, kept them covered in a cool place and they were fine.

Not sure about the pretzels, but if they are not completely covered in chocolate, I would worry that they could go stale.

i wouldnt freeze, chocolate doesnt like it, so you might end up with problems.
if they are sealed by chocolate, then they cant go stale or anything, and oreos and chocolate (and i assume pretzels too) all have long use by dates anyway.

Thanks for the replies ladies, so do you think if I coat them and then keep them in an airtight container they will be ok?

We are heading towards our summer here and 40 degree days!

Not fun trying to stop chocolate from melting.
