Red Velvet Problem

Hi everyone, just wanted to know if anyone else is experiencing the same problem and how to fix it.

It seems to be hit and miss when I bake my red velvet but sometimes the edges and bottom of the cake are brown, not all red. icon_sad.gif

Any suggestions? TIA icon_smile.gif

You could be overcooking the cakes.
