Do they expire? My co-worker gave me a wilton kit and it contained unopened gel colors. The thing is, she said they were about 10 years old. Should they be tossed out?

Chances are they will be very thick, and possibly grainy. You can add glycerin to them, but at 10 years old, I'd probably throw them out and start new.
