I love watching Cake Boss and other shows. I noticed that their cakes are really easy to handle and don't fall apart and apparently taste good as well. I love the cakes I make, and they taste really good. I do have a problem with them being really heavy and sometimes they fall apart because they are so delicate. I am wondering about the sponge cakes that the decorators are always talking about and if anyone has a recipe they have tried that is really good, moist and easy to handle. Any help would be greatly appreciated.

i dont have a sponge cake recipe but if you search here for hersheys cocoa collectors cake, then add a couple tbls of flour it gets dense enough for sculpting. Depends on how much flour u use

I use pound cake and it does not fall apart. It is not crumbly either. I have also used it for carving. So, i find it easier to handle than the other moist cakes.
