What is the best way and how long can you store homemade MMF?

How long can you freeze cakes and still have them fresh enough for clients?

I don't use MMF very often, but when I do the best thing I have found for storing is to cover with a thin layer of shortening, roll up in plastic wrap and then place into a plastic freezer storage bag. Stays good for a long time this way. As for the cakes, I alwasy freeze my cakes because I work full time and caking is just for fun. I have frozen cakes for up to a month and they were fine. Just make sure you wrap in plastic wrap. I use two layers and then I place inside a brown paper bag to keep from absorbing odors. When you unthaw the cake, let it sit in the plastic wrap until completely unthawed. HTH
