Does anyone know of a good diabetic sugar cookie recipe? My sister works at a nursing home where alot of the residents do not have any visitors.

I wanted to send each one a couple of cookies for Christmas but most have problems with sugar (not totally surprising).

Thanks in advance for any good recipes.

In the recipe section there is a listing for Diabetic cakes. I didn't scroll through the pages to see if cookies are there but it's worth a try.

If not, maybe you can try using a sugar substitute and soy flour.

Check the Splenda website. I think they have one there.
