Okay so I made my ganche last night and let it sit on the counter to set up. It is a good spreading consistancy but it seems a bit soft. After I put it on the cake do I need to put the cake in the fridge to harden the ganache up or will it "crust" over for me just sitting out.

You can put it in the fridge for 10-15 mins to harden up. Don't forget to mist it with water or brush some syrup on before you put your fondant on, otherwise it won't stick and you will get air bubbles under the fondant!
