Pineapple Coconut Cake

This is the recipe I used:2 1/2 cups flour
2 1/2 teaspoons baking powder
1 teaspoon salt
1/4 cup welled stirred cream of coconut
1 (8oz) can crushed pineapple with it's juice
1 tablespoon vanilla extract
1 1/2 cups sugar
1/2 cup butter
3 large eggs
I found it a little dry with not enough taste, can I add more of the cream of coconut (maybe 1/2 cup instead of 1/4) plus add maybe a 1/2 of flaked coconut? Do you think that this would work???? Thank You Eva
