I normally use these Xlarge Organic Free Run but I got some from the local farm and there are really small. My recipe calls for 3 large eggs - should I add an egg or just leave it?

Weigh them- I think that would work. Google will tell you wHat the average egg weighs, if it's a bit off I'd leave it, if it's very off, add another egg.
