I bake and freeze...

and for the record...you CAN freeze leftover cake even if it's been frozen before. Brides do it with the top tier, which if wrapped correctly can still taste great a year later.

I freeze my cakes for a few days or week or two before decorating...and we freeze leftover hunks and individual leftover slices too. Never had a complaint.

I'm with you Loucinda. I do not freeze. There is nothing wrong with freezing, it's just something I do not do. Plus I don't have enough space for my larger cakes as I work out of my home kitchen.
